Blueberry Lime Jam
4 ½ c. blueberries (fresh or frozen – if frozen, thaw first)
1 pkg dry fruit pectin
5 c. sugar
1 T lime zest (2 limes)
1/3 c. lime juice – 2 limes + I have to usually use a little from a bottle
Blend blueberries in blender. Combine with pectin in a large saucepot.
Bring to a boil, stirring frequently.
Add sugar, stirring until dissolved.
Stir in lime peel and juice.
Return to a rolling boil.
Boil hard 1 minute, stirring constantly.
Remove from heat.
Skim foam.
Process in jars: 15 minutes for half-pints.
